Blueberry Banana Bread

Once you bake this Paleo Blueberry Banana Bread you're going to be hooked so I advise you to bake with caution. I speak from experience, having nearly finished a whole loaf in one sitting before! This recipe is so delicious, it's good for breakfast, an afternoon snack or if you're just in the mood of something sweet. Are you sold yet!?

Ingredients:

3 Eggs

4 Bananas

1 Teaspoon Vanilla Extract

1 Teaspoon of Cinnamom

1 Cup of Blueberries (100g)

3 Teaspoons Honey/ Maple Syrup/ Agave

2.5 Cups of Ground Almonds

1/4 Cup of melted Coconut Oil (60ml)


 
 

 

I baked this a few times at the recommended temperature and time being 170 °C for 55 minutes. I then baked it at 175 °C for 70 minutes and it turned out perfectly. So the exact time you spend will depend on your own oven. I would advise trying it at 170 °C for 55 minutes and then keeping it in for longer if it is not getting that golden brown look. Once you think it looks done, pop a knife through the bread, and if it comes out clean then you're good to go.

 

 
 
 

Ps. I know it will look so tasty that you may be tempted to skip the cooling time of 20 minutes, but don't! it really does add the look and taste of the bread so make sure to leave it cool before serving.
