Coconut Cookies


These coconut and raisin cookies are a real crowd pleaser, and only 4 ingredients needed to make them. Coconut is quite sweet so these are ideal for an afternoon snack or after dinner with a cup of tea or coffee.

  • 2 ripe bananas
  • 25g Dessicated Coconut
  • Handful of Raisins
  • 40g Flaked Almonds


  1. Preheat the over to 180 Degrees.
  2. Mash the bananas.
  3. Add the flaked almonds, raisins and coconut.
  4. Mix well.
  5. Spray a baking tray with frylight and gently shape the into cookie shapes using a spoon.
  6. Cook for 15 minutes or until golden.
